Mushroom Salad (8 servings)
Ingredients
6 slices bacon, diced
1 small onion, minced
1 tbsp olive oil
3 tbsp lemon juiced
2 tbsp parsley
1 pound white mushrooms, thinly sliced
grated Parmesan cheese
Preparation Method
1. Fry bacon until transparent. Add minced onion; continue frying until bacon is crisp and onion is golden. Pour off bacon fat.
2. Add lemon juice, parsley and olive oil. Bring to boil.
3. Pour over mushroom, and garnish with Parmesan cheese to taste.
