Atkins Diet Induction Recipe 1 - Creamy Dumpling Soups (4 servings)

Ingredients

  • 1 tbsp soft butter

  • 1 egg plus 1 yolk

  • 1/2 cup heavy cream

  • 1/2 tsp seasoned salt

  • pinch of nutmeg

  • chicken broth

  Preparation Method

    Spray top of double boiler with grease substitute.  Rub with butter.  Beat eggs, heavy cream, salt and nutmeg together with fork.  Pour into to of double boiler.  Cook over hot (not boiling) water for 45 minutes or until set and firm.  Turn out onto waxed paper and cool.  Sliced into cubes.  Add hot broth.  Serve immediately.

Atkins Diet Induction Recipe 2 - Homemade Chicken Soups (4 servings)

Ingredients

  • 2 large stalks celery
  • 2 carrots, peeled
  • 2 onions, quartered
  • 1 parsnip, peeled
  • 3 sprigs parsley
  • 1 whole stewing hen or chicken (about 5 pounds), cut into 8 pieces, breast meat reserved
  • 10 black peppercorns
  • 2 bay leaves
  • 1 tablespoon kosher salt

Preparation Method

    Finely chop 2 tablespoons each of celery, carrot, onion and parsnip and set aside. Place large vegetable pieces, parsley, chicken (except reserved breast meat), peppercorns, bay leaves and salt in a large soup pot. Add 2 quarts of cold water. Bring to a rapid boil; skim off any foam that rises to the surface, then lower to a gentle simmer. Cook 1 hour. Discard all cooked solids with a slotted spoon. Strain soup through a mesh strainer into a smaller soup pot.

    Cut chicken breasts in half horizontally to make thin cutlets. Bring soup to a boil. Add chicken breasts and finely chopped vegetables to soup; cover and remove from heat. Allow to sit 10 to 15 minutes, until chicken is cooked through and vegetables are tender. Cut chicken into thin slices before serving.

Atkins Diet Induction Recipe 3 - Mushroom Salad (8 servings)

Ingredients

  • 6 slices bacon, diced

  • 1 small onion, minced

  • 1 tbsp olive oil

  • 3 tbsp lemon juiced

  • 2 tbsp parsley

  • 1 pound white mushrooms, thinly sliced

  • grated Parmesan cheese

Preparation Method

Fry bacon until transparent.  Add minced onion; continue frying until bacon is crisp and onion is golden.  Pour off bacon fat. Add lemon juice, parsley and olive oil.  Bring to boil.  Pour over mushroom, and garnish with Parmesan cheese to taste.

Atkins Diet Induction Recipe 4 - Chicken Salad With Ham Rolls (4 servings)

Ingredients

  • 1 cup cooked chicken diced

  • 1/4 cup mayonnaise

  • 1/4 cup chopped parsley

  • 1/4 cup chopped celery leaves

  • 1 teaspoon seasoned salt

  • 6 black, olives, diced

  • 4 tablespoons minced fresh green pepper

  • 8 slices boiled ham lettuce leaves

Preparation Method

Combined all ingredients excepts ham and lettuce.  Spread mixture on ham slices and roll each one up tooth pick it, and place it seam side down on bed of lettuce leaves.

Atkins Diet Induction Recipe 5 - Lemon Roast Chicken (4 servings)

Ingredients

  • 1 chicken (about 3 pounds), washed and patted dry
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons chopped fresh herb (i.e. thyme, parsley, sage, etc.) or 1 teaspoon dried herb
  • 1 lemon, sliced into rounds, intact
  • 2 tablespoons butter
  • 3/4 cup reduced sodium chicken broth 

Preparation Method

    Heat oven to 350°. Sprinkle chicken with salt, pepper and herb, inside and out. Loosen skin from breast with an index finger, and stuff 2 slices of lemon and 1 tablespoon butter onto each side of the breast. Place remaining lemon in the cavity. transfer chicken to a roasting pan. Roast 1 hour to 1 hour and 10 minutes; basting occasionally. An instant meat thermometer should read 170° in the thickest part of the thigh (not touching bone). Transfer chicken to a cutting board; wait 10 minutes before carving to allow juices to redistribute.

    Pour off fat from pan. Place pan over 2 oven burners; pour in chicken broth and bring to a boil. Scrape up brown bits on bottom of pan. Cook 23 minutes. Pour over carved chicken.

Atkins Diet Induction Recipe 6 - Luscious Lamb (4 servings)

Ingredients

  • 8 lamb chops
  • 2 tablespoons butter
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons lemon juice
  • 2 tablespoons gin
  • 1 teaspoon seasoned salt

Preparation Method

Rub lamb chops with small amount of garlic powder. Melt butter and add Worcestershire sauce, lemon juice, gin and salt.  Pour mixture over lamp chops and allow to marinate for 15 minutes before broil to desired doneness.

Atkins Diet Induction Recipe 7 - Maple Glazed Salmon (4 servings)

Ingredients

  • 4 eight-ounce salmon steaks

  • salt and pepper

  • 2 tbsp sugar-free maple or pancake syrup

  • 1 tbsp country Dijon mustard

  • 2 tbsp reduced-sodium soy sauce

 

Preparation Method

1. Heat broiler.  Line broiler pan with aluminum foil.  Rinse and pat dry salmon steaks.  Sprinkle with salt and pepper.

2. In a small bowl, combine syrup, mustard and soy sauce.  Place salmon on broiler pan; brush with half of the mixture.  Broil for 4 minutes.  Turn salmon; brush with remaining mixture and broil 2 to 3 minutes more for medium doneness.

Atkins Diet Induction Recipe 8 - Spicy Spare Ribs (4 servings)

Ingredients

  • 4 pounds spareribs

  • 1 tbsp paprika

  • 1 tsp chili powder 

  • 3/4 tsp salt 

  • 1/4 tsp dry mustard

  • 1/4 tsp garlic powder

  • 1/8 tsp pepper

Preparation Method

    Preheat oven to 450o.  Place single layer of ribs, meaty side down, in shallow roasting pan.  Roast in 450o oven for 1/2 hour.  Drain off fat.

    Combine the rest of the ingredients.  Place in saltshaker.  Sprinkle evenly over ribs.  Reduce oven to 350o.  Roast meaty side up, for spareribs, 1/2 to 1 hour longer.

Atkins Diet Induction Recipe 9 - Shrimp Curry With Egg (4 servings)

Ingredients

  • 5 tbsp butter

  • 1 pound boiled shrimp

  • 1 cup mayonnaise

  • 2/3 cup water

  • 1/2 cup cream

  • 1 tsp curry powder

  • 1/2 teaspoon cayenne

Preparation Method

    In skillet, melt 2 tablespoons butter.  Add shrimp.  Stir over moderate heat for 3 minutes.  Remove from heat.  In a saucepan, heat mayonnaise, 1/2 cup water, cream, curry powder, and cayenne.  Stir until smooth.  Taste test - add more curry powder if desired.
