Banana Bread (30 Servings)
Ingredient for banana bread
12 ounces soft cream cheese
5 eggs
1 cup mashed bananas
1/4 cup soy protein powder
1/3 cup stoneground whole wheat flour
1 tsp baking powder
16 packets Splenda sugar substitute
2 tsp vanilla extract
2 tsp grated lemon peel
1 cup unprocessed wheat bran
1 cup whole almond meal
Preparation Method
1. Preheat oven to 325oF. Lightly line and butter three miniloaf pans.
2. Put cream cheese and two eggs in the bowl of an electric mixer and beat until smooth, thick and fluffy to eliminate all cream cheese lumps. Add the remaining eggs, one at a time, beating briefly after each addition. Add the seven next ingredients and beat at slow speed. Add the wheat bran and nuts, blending at slow speed.
3. Spoon the batter into the pans and bake the banana bread for about 45-55 minutes or until done. Cool before slicing the banana bread.
