1 1/4 cups cold water
1 cup hot water
2 tbsp olive oil
1 package rapid-rise yeast
1 1/4 cups whole almond meal
1 3/4 cups unprocessed wheat bran, toasted
1 1/2 cups vital wheat gluten flour
1 cup soy protein powder
1/4 cup stoneground whole-wheat flour
salt to taste (about 3/4 tsp)
olive oil for kneading, as needed
Preparation Metho for Low Carb Bread
1. Preheat oven to 200oF when you begin making the bread. Turn oven off when you begin shaping the low carb bread. Use butter to grease the nonstick bread pans that you use or the cookie sheet if making free forms.
2. Combine the hot and cold water in the bowl of electric mixer or a large mixing bowl. Add the oil. Stir in yeast. Leave for 5 minutes.
3. Meanwhile, put the dry ingredients in a medium mixing bowl and stir together. After 5 minutes, add the dry mixture to the liquid. Set the mixer to the lowest speed to knead the dough for 5 minutes. If the dry mixture is not fully absorbed, add a tablespoon of warm water to the dough. 6. Freeze extra loaves. Thaw loaves at room temperature before serving your low carb bread.
