Cookie/Pecan Crust (8 servings)
1 egg white
2/3 cup assorted cookie crumbs (about 18 cookies)
3/4 cup roasted, crushed pecans
2 tbsps butter, melted
Preheat oven to 300o F. Lightly butter a 10 inch tart pan or a 9 inch nonstick, heavy-gauge springform pan (more suitable for low carb ingredients, such as cookies as the tend to brown or darken more quickly) or a regular pie pan.
Lightly beat the egg white. Mix together the cookie crumbs and pecans. Stir in the butter and egg white. Press this mixture into the bottom of the pan.
Bake the curst for 15 to 20 minutes until it is lightly brown. If you plan to bake a topping or filling in the pan, bake the curst for about 8-9 minutes and remove from oven before darken.
