Italian Meat Sauce (6 servings)
2 tbsp olive oil
2 tbsp butter
3/4 cup chopped onion
1 cup finedly chopped celery
11/2 cup stock or broth
2 tbsps tomato paste
11/2 cups canned, crushed tomatoes
salt to taste
freshly ground black pepper to taste
2 tsps dried basil
2 tsps dried oregano
1 1/4 pounds leand ground beef
Heat a medium-size heavy-bottomed saucepan over medium heat. Add the oil and the butter. Add the onion when the butter foams and sauté for 3-4 minutes. Add celery and cooked for additional 3 minutes
Add broth and tomato paste to the saucepan. Whisk to dissolve paste. Add remaining ingredients. Stir and simmer the sauce gently for 15 minutes. For smooth sauce, put in a food processor or blender.
Add 2 to 3 spoons of oil into a hot skillet, quickly brown 1 1/4 pounds of ground beef. Seasoned with salt and freshly ground black pepper. When the meat has turn brown (no need for it to cook through) add it to the sauce.
Simmer the meat in the sauce for about 11/2 to 2 hours. Keep heat very low. Adjust seasoning.
