Broiled Salmon (2 servings)

Broiled Salmon Ingredients

  • 2 medium sized fresh salmon steaks, 1 inch thck

  • lime juice

  • butter

  • salt and freshly ground pepper to taste

  • 4 pinch of dried tarragon

  • 4 ounces of dry white wine

Broiled Salmon Preparation Method

Place salmon steaks in shallow, fireproof baking pan and squeeze juice over them.  Dot steak liberally with butter, sprinkle with salt and pepper and a pinch of dried tarragon leaves for each steak.  Pour wine in pan around the steak and not over the steak.  

Place under broiler about 4 inch from flames.  Cook for about 10 -12 minutes, basting carefully during latter part of cooking so herbs are not disturbed.  Turn steak and season as before.  Broil for 5  to 6 minutes.  Baste after herbs have "set" by heat.  Skin should get crisp.  Watch carefully.

Carbohydrate per serving of broiled salmon : 2 gram
