Cream Of Spinach Soup (6 servings)
2 box (10 ounces each) frozen spinach, thawed
2 tablespoon butter
1 small onion, finely chopped
3 tablespoon Thicken Thin Not/Starch®
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cumin
1 can (14 1/2 ounces) reduce sodium chicken broth plus 1 can water
1 garlic clove, pushed through a press
1 cup heavy cream
salt and pepper
Preparation Method for Cream of Spinach
1. Squeeze excess moisture from spinach; blot with paper tower. Finely chop and set aside
2. In a large saucepan, melt butter over medium heat. Add onion; cooked 3 to 4 minutes, until softened. Stir in thickener, nutmeg and cumin, mix until smooth.
3. Add spinach, broth, water and garlic to saucepan. Mix well. Reduce heat to low and simmer for 10 minutes.
4. Add cream and cook on low until heated through. Season to taste with salt and pepper.
